Out of one pack of chicken you can make three dinners for a family of four.

We can stretch the chicken into three different dinners.
Grilled chicken Dinner with salad and corn, Thai Chicken Stir fry over rice and
Cilantro Lime Tacos with Spanish beans and rice.
Start off by slicing the top 1/3 off of each chicken breast.
It is easier to cut chicken horizontally (split) when it is really cold (almost frozen).
This stabilizes the chicken and you can slice the chicken easily.
Use this top cut of the chicken breast to grill for your first night’s dinner.
Season with salt, pepper and Cajun seasoning before putting on the grill.
Serve with salad and vegetable.
While your chicken is grilling use the time to prepare for your next two meals.
Split the reaming chicken into two equal portions.
Grab two quart or gallon freezer bags if you are not going to be using the chicken in the next couple of days.
Cut one portion of chicken into cubes and place in freezer bag. Marinade in olive oil, fresh cut up cilantro,
1/2 fresh lime juice and tajin seasoning. Add a dash of cayenne pepper if you like it spicy.
At this point, freeze or put in refrigerator for later use.
When you are ready to cook, sauté chicken until done.
Shred chicken and serve on tortillas with lettuce, tomatoes, fresh cilantro and a squeeze of lime over the top.
Add rice and beans to make it a complete meal.
Cilantro Lime Chicken Tacos Plate:
While the chicken is still very cold, cut into slices, put in freezer bag and marinate
with soy sauce, olive oil, minced garlic and ginger.
Freeze or put in refrigerator for later use.
When you are ready to make your Thai Chicken Stir Fry,
Sauté chicken in olive oil and minced garlic until fully cooked.
Add 1/2 cup peanut butter to pan
Add 3/4 cup water or chicken broth
Stir until peanut butter is dissolved into a sauce
Add one large pack of frozen stir fry vegetables
Add soy sauce to taste
Serve over rice
