Weekly Menu Kroger Shopping

This week the menu is based off of the great sales at Kroger.

Time to stock up on the 10 pound bag of leg quarters for $3.90!  Make sure to buy extra to make your freezer happy!

   

Monday

Chipotle Grilled Leg Quarters – Fresh Heritage Farm Chicken Leg Quarters – 39 cents per pound – Sold in a 10 lb bag for $3.90 (Stock up the Freezer for this Price)  Cook full 10 pound bag.  Use leftovers for lunches and Wednesday Meal.

Try Grandma’s  Chicken Salad to utilize your leftover chicken.

You can also freeze your cooked meat for use later.  Perfect to throw in soups or casseroles.

Cilantro Lime Chicken Tacos (Recipe Below)- use leftover chicken from Monday

Enjoy these Cilantro Lime Chicken Tacos with a Margarita (only if you’re 21+) for a Dinner Fiesta!

Cilantro Lime Chicken Taco

servings= 4      time=15 minutes to prep; 8 hours to marinate; 30 minutes to cook         difficulty=easy

These tacos spice up a weeknight meal

Ingredients:
– 2 -3 chicken breasts, chopped into cubes
– 1/4 cup olive oil
– 1 Tablespoon fresh lime juice
– 1/2 cup cilantro, chopped, divided
– 1/4 teaspoon Tajin seasoning (optional)
– 1/8 teaspoon ground cayenne pepper (optional, to make it spicy)
– flour or corn tortillas (based on personal preference)
– 1 cup lettuce, chopped (optional garnish)
– 1 tomato, diced (optional garnish)
– 1/4 cup shredded cheese (optional garnish)

Directions:

1. Place chopped chicken, olive oil, lime juice, 1/4 cup cilantro, lime juice, optional Tajin seasoning, and optional cayenne pepper in a gallon size freezer bag. Mix marinade with chicken and marinate in the refrigerator 8 hours or overnight.
2. Heat skillet over medium heat. Discard marinade, and sauté chicken until done.
3. Shred chicken and serve on tortillas with lettuce, tomatoes, remaining 1/4 cup cilantro, shredded cheese, and a squeeze of lime over the top.
4. Add rice and beans to make it a complete meal.
