Turkey, Broccoli and Cheese Stuffed Peppers
Ingredients:
6 Bell Peppers
½ Bunch Broccoli Finely Chopped
1 Cup Chopped Turkey
1 Cup Shredded Cheese (divided into ½ cup for mixture, ½ cup for topping)
½ Cup Rice
¼ Cup Softened Cream Cheese
¼ Cup Seasoned Bread Crumbs
1 Clove Minced Garlic
Spices: Garlic Powder, Paprika, Red Pepper Flakes, Parsley, Salt and Pepper
Directions:
Pre heat oven to 350*F
Cut the tops off the bell peppers and clean the seeds and inside out
Mix all the rest of the ingredients together
Stuff each pepper with the mixture
Top with shredded cheese
Bake for 25 to 30 minutes until internal temperature reaches 165*F
Peanut Thai Stir Fry
1 ½ Cups Diced Turkey
1 Package Stir Fry Vegetables
3 Table spoons Peanut Butter
½ Cup Water
2 Tablespoons Soy Sauce
1 Teaspoon Minced Garlic
½ Teaspoon Minced Ginger
¼ Teaspoon Red Pepper Flakes
1 Tablespoon Olive Oil
Peanuts to Garnish
Rice or Noodles
Directions:
Add olive oil to pan
Sauté Ginger and Garlic on low
Add additional ingredients and stir until ingredients are combined
When Sauce has thickened and the temperature has reached 165*F,
Serve over Rice or Noodles
Top with Peanuts
Turkey Quesadillas
Ingredients:
Large Flour Tortillas
Shredded Cheddar Cheese
Diced Turkey
Cranberry Sauce
Sour Cream for Topping
Butter
Directions:
In a cast iron skillet heat 1 teaspoon butter
Place one flour tortilla in pan when it is hot
Spread a layer of Cheese on Tortilla
Add Turkey
Cranberry Sauce in small pieces
Top with an extra layer of cheese before adding another tortilla
Let cheese melt then flip to the other side
Top with Sour Cream for serving
