This week we will utilize all the meats we have stocked up on in the past months and save some dough. The menu will be simple and include a couple of crock pot and skillet meals. Still head to the store to pick up all the great deals this week including all the summer produce that is on sale. Check out Kroger, H-E-B, Sprouts, Randall’s and Aldi to see all their great deals.

Tortilla Crusted Chicken – Get fried chicken crunch from baked chicken!

Breading
– 4 chicken breasts, cut in half and flattened to 1/4-1/2 inch thick
– 1/2 bag of tortilla chips, yellow or white corn, crushed in a ziploc bag with a rolling pin
– 1 cup flour
– 2 eggs
– garlic powder, onion powder, salt, and pepper to taste
– 1 lime
Sauce (optional)
– salsa or fresh pico de gallo
– sour cream or fresh Greek yogurt

1. Preheat oven to 350°F.
2. Prepare 3 bowls.
Bowl 1 – flour, garlic powder, onion powder, salt, and pepper
Bowl 2 – eggs, beaten with a fork or whisk
Bowl 3 – crushed tortilla chips
3. Dredge each piece of chicken through the flour, coating completely.
4. Dip chicken into egg mixture.
5. Press chicken into tortilla chips, coating completely.
6. Place chicken on a baking sheet.
7. Bake in 350°F for 30-45 minutes, or until internal temperature reaches 165°F.
8. Remove from oven and squeeze fresh lime juice over chicken.
9. Serve with optional sauce.

Wednesday Slow Cooker Meal
Italian Meatballs Made with Ground Turkey
Ingredients:
1 pound ground turkey
2/3 cup bread crumbs
1 tablespoons olive oil
2 cloves minced garlic
¼ cup grated Parmesan cheese
1 large egg (beaten)
2 tablespoons dried basil
2 tablespoons dried oregano
½ teaspoon crushed red pepper (optional)
1 teaspoon salt
2 large sweet onions, sliced
2 large (28 ounce) cans crushed tomatoes
Parmesan cheese for topping at serving
Instructions:
- Mix ground turkey, bread crumbs, olive oil, garlic, Parmesan cheese, beaten egg, basil, oregano, red pepper, and salt together, just until mixed. Do not over work.
- Roll individual meatballs into desired size. Golf ball size works great.
- Place rolled meatballs at bottom of slow cooker with a little olive oil to coat the bottom
- Add 2 Large Sweet Onions Sliced
- Add 2 Large 28 ounce Cans of Crushed Tomatoes over the meatballs and onions
- Cook on low for 4- 6 hours
Meatballs are always a favorite in my house. By using turkey instead of beef we can change up our normal recipes and give them a fresh taste. It is always great to try something new. If you are just delving into cooking with ground turkey, try adding half turkey and half lean ground beef. I think you may enjoy the transition better than jumping in head first.

– 2-3 cooked chicken breasts, cut into bite-sized pieces
– 3 cups cooked brown rice (1 cup uncooked rice yields 3 cups cooked rice)
– 2 avocados, cut into bite-sized pieces
– 2 cups (1 pint) cherry tomatoes, halved
– 1/2 cup cashews or walnuts
– 1/2 cup feta cheese (can substitute shredded colby-jack, cheddar, etc)
– salt and pepper to taste
– fresh lime wedges
– salsa for garnish (optional)
– plain Greek yogurt or sour cream for garnish (optional)
– chopped cilantro for garnish (optional)

1. Distribute rice, chicken, avocado, cherry tomatoes, nuts, and cheese between 4 bowls.
2. Squeeze lime juice over bowls, and add salt and pepper to taste.
3. Garnish with salsa, Greek yogurt (or sour cream), and cilantro.
Recipe Notes
– If you don’t have Italian seasoning, you can substitute equal parts of dried oregano, dried basil and dried thyme.
– Make sure your pan is oven safe to 400 degrees.
