Cilantro Lime Chicken Tacos

These tacos spice up a weeknight meal.

Ingredients

  • 2 -3 chicken breasts, chopped into cubes
  • 1/4 cup olive oil
  • 1 Tablespoon fresh lime juice
  • 1/2 cup cilantro, chopped, divided
  • 1/4 teaspoon Tajin seasoning (optional)
  • 1/8 teaspoon ground cayenne pepper (optional, to make it spicy)
  • flour or corn tortillas (based on personal preference)
  • 1 cup lettuce, chopped (optional garnish)
  • 1 tomato, diced (optional garnish)
  • 1/4 cup shredded cheese (optional garnish)

Directions

  1. Place chopped chicken, olive oil, lime juice, 1/4 cup cilantro, lime juice, optional Tajin seasoning, and optional cayenne pepper in a gallon size freezer bag. Mix marinade with chicken and marinate in the refrigerator 8 hours or overnight.
  2. Heat skillet over medium heat. Discard marinade, and sauté chicken until done.
  3. Shred chicken and serve on tortillas with lettuce, tomatoes, remaining 1/4 cup cilantro, shredded cheese, and a squeeze of lime over the top.
  4. Add rice and beans to make it a complete meal.
